Hand picked in mid-March, 80% destemmed to small open fermenters, balance was 100% whole bunch ferment. All natural ferments, all batches spent 3 weeks total maceration time. Pressed, settled overnight, and racked to barrique (20% new) for MLF. Racked off gross lees in late Spring and returned to barrel until late January, then racked and prepared for bottling in February 2025.
